Our Lemon Yogurt Vinaigrette has been a staple item every July for several years! Folks love to cover the My Boy Blue salad with it! It is also one of our most requested items that we’ve received lately on social media.  Every time we make it a little different but here is our basic recipe:

1 Cup Greek Yogurt (Non-Fat is fine)
½ Cup Freshly Squeezed Lemon Juice
½ Cup Extra-Virgin Olive Oil
Zest of 1/2 Lemon
1 Finely Chopped Shallot
Honey to taste.
Dash of Salt and Pepper

Stir vigorously and enjoy 🙂
